Materials for the Definition of Bulgur Patties in a Purslane Bed with Yogurt

For the meatballs;

  • 1 cup meatball bulgur
  • 1 cup of hot water
  • Half a glass of flour
  • 1 egg
  • Salt

To boil the meatballs;

  • Water
  • 1 teaspoon salt

For the sauce of meatballs;

  • Half a tablespoon of tomato paste
  • Half tablespoon of pepper paste
  • 2-3 tablespoons of olive oil
  • Chili pepper, ground pepper, black pepper, cumin, mint

For purslane bed;

  • 1 bunch of purslane
  • 1 large bowl of yogurt
  • 2 cloves of garlic
  • Salt

Definition of Bulgur Meatballs in Purslane Bed with Yogurt

Wet the bulgur with 1 cup of hot water, cover it. When the bulgur swells, add the egg, flour and salt and knead by wetting your hand from time to time. When the kneading process is over, make your small meatballs again by wetting your hand, and place the meatballs on the floured plate. Boil water in the pot and add 1 teaspoon of salt, throw the meatballs in this water and boil, remove the meatballs from the water when it starts to rise above the water. In a pan or saucepan, fry the tomato paste with olive oil, add the spices and a few spoons of the meatballs and cook for a few minutes, then bring this sauce to the meatballs. At a single point, crush the purslane by hand, add the grated garlic and yoghurt whipped with salt, mix it, put it on a serving plate, add the meatballs and serve. Bon Appetit:)
